Smashed Potato Bites With Dill Pickle Egg Salad
Ingredients
- Small potatoes
- Olive oil or butter
- Cheese (melty)
- Eggs
- Dill pickles
- Mayo
- Fresh dill
- Red onion
- Dill Pickle Salt
How to Make
1. Boil potatoes until tender.
2. Smash gently on a tray, drizzle with oil, and sprinkle Dill Pickle Salt.
3. Bake at 425°F until crisp and golden.
4. Add cheese on top to melt.
5. Mix chopped eggs, pickles, mayo, fresh dill, and a pinch of Dill Pickle Salt into egg salad.
6. Spoon egg salad over the hot potatoes.
7. Top with thin onion slices and extra dill.
